Today Audrey and I got to put on a Christmas Cookie Exchange at the Baptist Campus Ministry at UT for international students. I invited some friends and we all taught the international students how to make our favorite kinds of cookies.
We talked about Christmas traditions - each of us shared a few from our families, and we shared the Christmas story (which we explained is more than a mere tradition.)
I think the students really enjoyed it. None that I spoke with had ever made cookies. So they did all the work and we just helped them along. And then we sent them each home with their own batch of cookies. It was really fun.
Here are a few pictures. (you may notice that Audrey was passed around much of the time. I love how the students just take her and pass her around. I looked around for her once and there was a Chinese man holding her. How sweet is that. ...all in one week she has been loved on by international students and also some youth girls at a children's home that we visited. makes me think more about that whole idea of heritage. But anyway...here are the pics...)

These guys were in my group. The lady in the middle has only been in America for 2 weeks.
It was a great time. Hopefully is was a nice time for all of the students to experience some American Christmas traditions and mostly the warmth of Christ this Christmas.

Now, how about a couple of these recipes:
Coconut Swirls
Yield: 3 1/2 dozen
Ingredients:
· 1/3 cup butter or margarine
· 3 tablespoons water
· 1 teaspoon vanilla extract
· 2 cups sifted powdered sugar
· 1/2 cup instant nonfat dry milk powder
· 3 cups flaked coconut
· 1 cup (6 ounces) semisweet chocolate morsels
Preparation: Melt butter in a medium saucepan over low heat. Remove from heat, and stir in 3 tablespoons water and vanilla.
Combine powdered sugar and milk powder; stir 1/2 cup at a time into butter mixture until smooth. Stir in coconut. Shape into 1-inch balls, and place on ungreased baking sheets.
Chill 20 minutes.
Place chocolate morsels in a small heavy-duty zip-top plastic bag; seal. Submerge in hot water until chocolate melts. Snip a tiny hole in 1 corner of bag, and drizzle chocolate over coconut balls. Store in refrigerator.

White Bread, rolled flat with crusts cut off
Spread with cream cheese
Roll up jelly fashion, cut into thirds
Roll in melted butter, then in sugar and cinnamon
Bake at 350 for 10 minutes

Oh this really makes me miss international student ministry in Texas... I LOVED this post, Amy! And those recipes both sound amazing!
